The best egg salad recipe

· 8 hard boiled eggs
· 3/4 cup mayonnaise
· 2 tablespoons mustard
· 3 tablespoons red onion finely chopped
· 2 tablespoons sweet pickle relish
· 2 garlic cloves finely chopped
· 1-2 tablespoons fresh chopped herbs
salt, pepper, dash of cayenne

STEP 1

Roughly chop hard boiled eggs into small pieces. I use an egg slicer which makes this easy.

Add mayonnaise and mustard. I like using Dijon for a bright fresh flavor.

Add red onion, pickle relish, salt and pepper to taste.

Add chopped fresh herbs. I love chervil, parsley, or dill. Then season to taste with salt, pepper, and a dash of cayenne pepper, if you have it.

STEP 5

Assemble your sandwich! Add your favorite lettuce or crisp microgreens, maybe a bit of bacon.
