A Batard is an oval shaped loaf of sourdough bread. I'll show you how to shape it.
Flour the banneton basket and set it aside. I use rice flour.
Loosen the dough and flip it, so the smooth side is down.
Fold the dough 2/3rds way up, ease out the sides and cross them over, pinning the edge.
Pull small sections to the center and stitch them in place. You'll feel the dough tighten.
Pull the top over and tuck it under the bottom. Push with the bench scraper to secure.

Sprinkle with rice flour, flip, and ease it into the banneton.
Stitch again if you like.
Finish with a bit more rice flour to prevent sticking.
