Prepare a loaf pan with parchment and baking spray. Set aside until needed. Preheat the oven to 350F.

STEP 1

Mash the ripe bananas. I use frozen and simply squeeze the banana out of the skin along with the juice. It has an intense banana flavor that is ideal for banana bread.

Combine the dry ingredients.

Mix the softened butter and both sugars.

STEP 4

Add eggs one at a time. Mix until fully incorporated.

Add the sour cream (or plain yogurt) and vanilla extract. Mix.

STEP 6

Now add the bananas. The mixture might appear to break, but this is ok. It's the reaction from the sour cream.

STEP 7

Add the flour and mix until incorporated. This banana bread is smelling great, and we haven't even baked it yet.

Add chocolate chips or chunks. You could also chop up a bar of chocolate. Save some back to sprinkle on the top.

STEP 9

Pour into the loaf pan and spread evenly.

STEP 10

Sprinkle on the rest of the chips. Bake until a toothpick comes out clean. Tent loosely with foil if needed to prevent over-browning.
